If you like pecan pie, then you’ll love this twist on the classic. One online reviewer claims that this muffin recipe is, “So simple, easy and yummy! Perfect for a busy Mom! I toss a few of these in the diaper bag before I do my running around and I have a nice little energy packed bite when I need it. Definitely a hit.”
These are so good and sooo easy. The brown sugar really shines through. I made regular size muffins and got 8 so will certainly double next time. Mine were a little too “crusty” on the outside (baked for 15 min) so maybe a minute or two less next time. So yummy with my morning eggs!
This is an amazing recipe. My muffins came out perfect. I use unsalted butter so I added 1/2 tsp salt. I also added 1 tsp vanilla extract. No issue with sticking just used cooking spray. Only baked for 18 minutes until tooth pick came out clean. My husband loved them. Will definitely make again.
It’s hard to believe there are only five ingredients in these wonderful little muffins! The brown sugar makes them taste like pecan pie.
1 cup of chopped pecans.
1 cup of firmly packed brown sugar.
½ cup of flour.
2 large eggs.
½ cup of melted butter.
Preheat the oven to 350° and place foil-baking cups in muffin pans.
In a large bowl, mix together the pecans, brown sugar and flour.
Beat the eggs very well and mix in the butter. Pour the eggs over the dry ingredients and mix to combine.
Spoon the batter into cups ⅔ full and bake for 20 to 25 minutes.
Transfer to wire racks immediately after baking.
